Grilled/Smoked Peach Crostini
The perfect peach for a new yummy recipe~
Ingredients:
1 baguette sliced ~1 inch thickness
2-3 (depending on your crowd) lightly firm peaches washed and sliced about ½ inch wedges
1 C Ricotta and or Burrata cheese
3 TBLSP of half and half or milk
1 clove garlic minced
1-2 Roma tomatoes chopped
4-5 leaves of basil sliced into ribbons (chiffonade)
1 TBLSP lemon juice
EVOO spray and liquid
S&P
Balsamic Glaze and Hot Honey to drizzle on top
Pre heat your grill to 375 degrees
Spray both sides of your baguette and peaches with evoo. Once grill is ready, place your bread flat and cook on both sides 3-4 minutes until you see grill marks. This can be shorter time if you don’t want it extra crispy.
While bread is grilling, spray both sides of your peach wedges. Remove your bread the grill your peaches for the same amount of time. I like the grill marks on it so I keep them on a little longer but don’t let them get mushy. I literally stay at the grill and check repeatedly and flip. Let them cool.
Remove your burrata from the fridge if using or I used my Magic Bullet to whip up the Ricotta cheese with a few tablespoons of half and half
In a mixing bowl add your chopped Romas, a few grilled peach wedges chopped, garlic, lemon juice, basil, a tablespoon of evoo and salt and pepper to taste. Set aside.
Now let’s put this all together. Smear each piece of toasted baguette with your ricotta or burrata cheese. Top with your peach tomato mixture or just with a wedge of grilled peach. Drizzle with a just a hint of oil, the balsamic glaze and hot honey. Then sprinkle with your left over basil.
So easy to make and tastes incredible~

Cook Time: ~5 minutes
Total Time: 35 minutes

I did not need to store these as Den ate a few and the rest went to book club. I would think maybe covered and in the fridge for two days, but they may get soggy. I suggest eating fresh but any left over peaches or peach tomato mixture store in a covered dish in the fridge for 2 days. Left over baguette wrapped in a bread bag and can be left on the counter..
Other ways to enjoy maybe skip the basil and try mint with strawberries or blueberries. Want a tad more kick add chopped jalapeños. Extra crunch maybe a few chopped walnuts. I would not touch the burrata but if you wanted to “herb” up your ricotta with thyme or rosemary it will give it a more savory flavor or add honey for a sweeter taste.

PS you can reduce regular Balsamic vinegar on the stove top for 20-25 minutes while stirring repeatedly or you can go to your local grocery store and pick up a bottle of premade balsamic glaze. Same concept just easy and tastes great :)
